Foie gras whipped with distant spices, quince calisson with ginger,

clementine jelly with “Timut” pepper.

Jerusalem artichoke velouté, sweet onion ravioli with egg yolk soy,

roasted langoustine and shellfish foam.

Capon roasted on the chest, stuffed leg, red cabbage nectar,

Comté puff pastry and Jerusalem artichoke.

Saffron coconut log with exotic fruits, ivory ganache drunk with orange blossom,

vegetable sorbet with lime.
